One’s attention is forcefully called to the delicate shape, made to look like a beautiful yellow wheat head (a color derived from the presence of egg, making up 25% of the pasta).
This is handmade, fresh pasta filled with a four-cheese cream (ricotta, edamer, grana padano and fontal) that is extraordinarily creamy, both the main ingredient and its filling. The pasta preserves its sapid identity well, while the presence of the cheeses in the dense cream brings a great deal of succulence.
In short, a beautifully prepared dish, artisan and very polished, which can also be prepared quickly: boil for two minutes in water with an abundance of salt and dress to taste.
