Rodrigo de la Calle, un cocinero, y Santiago Orts, un científico, han sumado esfuerzos para aportar una perspectiva nueva del mundo vegetal aplicado a la Alta Cocina. En su taller, explicarán en qué consiste la gastrobotánica y cuál es su filosofía de trabajo.
 
De la Calle y Orts han rescatado del olvido variedades de frutas y verduras, desaparecidas, denostadas o desechadas por la sociedad moderna, dándoles una nueva aplicación gastronómica.
